Laboratory Viscometer Application Data Sheet

Honey is a food product used in fillings, coatings, or as an additive to beverages

Test Equipment:

  • Instrument: Standard Viscometer or Rheometer
  • Spring Torque Range: RV
  • Spindle: SC4-29/13RPY Sample Chamber
  • Accessory: Small Sample Adapter TC-502P Programmable Temperature Bath
  • Speed, rpm: 10, 20, 30 and 40 rpm

The Small Sample Adapter may be used with various Brookfield Viscometers or Rheometers. The choice of Spring Torque Range, spindle and speed may vary widely, depending upon the honey. In our example, we used a Brookfield RVDV-III+, with Rheocalc v3.1 software for automated instrument control and data acquisition. Our test temperature of 21°C was maintained by connecting the Small Sample Adapter water jacket to a TC-502P Programmable Refrigerated Bath. Representative data from the analyses are shown in Figure 1:

Figure 1: Honey at 21°C

We tested the sample starting at 10 rpm, increased the speed to 20 rpm, then 30 rpm, and finally 40 rpm. We then decreased the speed to 30 rpm, 20 rpm and stopped at 10 rpm. This type of test method is referred to as an "up/down speed ramp". The Figure 1 graph shows that the honey was essentially "Newtonian", or very slightly shear-thinning, with viscosity values around 21000 cP.
